There is no yuk in Yucca! This long, sassy root vegetable comes from the Agave family, is a dietary staple in many countries, is full of fiber & easy to cook. Yucca can be boiled, baked, steamed or fried… Anything you can do to a potato, Yucca makes it look exotic.
Here is just one of many recipes:
Take an adventure to the exotic veggie section of the grocery store… Photo in hand & select your Yucca.
Peel and slice long ways into thick strips.
Heat oven to 375•.
Coat Yucca strips with coconut oil, a little Celtic sea salt & a sprinkle of cayenne powder.
Bake for 15-20 minutes… Keeping a close eye throughout.
Cool & eat alone or serve alongside your veggie burger!
